The physico-chemical analysis of 12 samples from diffrents regions of Algeria and harvested between 2009 and 2011, showed tha pH, humidity and HMF are consistent with the Codex Alimentarius and the standards of the European Union. Research of pesticides and their residues by gaz chromatograpy in different honeys showed their absence in the samples studies. However, the analysis of different samples of honey atomic absorption spectroscopy has revealed the presence of traces of heavy metals, but does not constitute a danger on human health.
