Abstract: This work aimed to study the morphological and physicochemical characteristics of seven cultivars of dates of the Saoura oasis named: Adem, Adem Boulleh, Kahlaya, H’mira, Deglet Djedir, Fegous and Cherka. The results showed that there is a very large significant difference at α = 0.05 (p <0.001) for all the morphometric parameters (date length and diameter, pit length and diameter; date, pulp and pit weight; Pulp and pit / date weight ratio). The chemical composition of our seven date cultivars showed the richness of their pulp in total sugars, varying from 38 ± 5.00 (%) FW for Adem Boulleh cultivar to 78.5 ± 2.5 (%) FW for Kahleya cultivar, also, there is a high significant difference in moisture content between them at α = 0.05 (P < 0.0001) and they are distributed between soft and semi-soft date consistence. In addition, for Deglet Djedir cultivar, the values of phenolic coumpounds have reached up to 165.00 ± 15.00 mg of gallic acid equivalent / 100 g of dry extract and 13.67 ± 0.58 mg of quercitrin equivalent / 100 g of dry extract for the total phenolic and flavonoid contents respectively. These results revealed that date fruits have a high nutritional value. Also, statically, Spearman correlation (p<0.05) showed there were there is a strong correlation (p <0.005, α = 0.05) between some studied characteristics. Based on the results found, we were able to evaluate the quality of our seven cultivars of date according to the traits attributed to the eight characteristics related to the pomological or physicochemical aspect of the date fruit -and which have already been defined by the previous studies - between good and bad quality.
