الخبز والتراتبية الاجتماعية في الجزائر خلال القرن التاسع عشر

الملخص

يعتبر الغذاء أحد المواضيع التي لا يزال البحث فيها منسيا من طرف الباحثين الجزائريين رغم ما لها من أهمية بالغة في كشف الهوية الثقافية والاجتماعية والمستوى المعيشي، من هنا جاءت هذه الدراسة التي تلقي الضوء على أكثر الأغذية انتشارا بينهم وهي مادة الخبز والتي تعتبر ظاهرة مميزة لبلدان البحر الأبيض المتوسط. تتناول هذه الدراسة أنواع الخبز التي كانت منتشرة في الجزائر خلال القرن التاسع عشر، والتي تعكس التراتبية الاجتماعية فيها من خلال ما كانت تتناوله الطبقة الثرية المترفة والتي امتازت بجودة الأنواع ورقة الذوق والتأثر بالأنماط الأجنبية خاصة الأندلسية والتركية وحتى الفرنسية، وما كان منتشرا بين الفقراء من خبز أسمر أساسه الشعير والنخالة وحتى الذرى والبلوط أو مزيج من مختلف الحبوب وهو ما يعرف بالبومخلوط. ولئن كانت موائد الأغنياء قد اتسمت بالوفرة فإن موائد الفقراء قد اتسمت بالندرة ولم يكن الغرض منها استعراض الترف والرفاهية بقدر ما كان يقصد سد الحاجة البيولوجية، خاصة مع ما أفرزته أحداث القرن التاسع عشر من انتهاء الوجود العثماني وبداية الاحتلال الفرنسي الذي هدم البنى الاجتماعية والاقتصادية مما أدى إلى تراجع المستوى المعيشي للسكان، حيث انتقل المجتمع من مرحلة إنتاج وتأمين غذائه، إلى مرحلة لم يعد بإمكانه فيها فعل ذلك، لتصبح أنواع الخبز في جزائر القرن التاسع عشر تعبيرا واضحا على التراتبية الاجتماعية والمستوى المعيشي فيها. Food is one of the subjects that still being mistreated by the Algerian researchers, despite its importance in revealing the cultural and social identity and the standard of living of the Algerian society. This study came to spot the light on the most prevalent foods within this society, especially the bread, which is a quite distinctive phenomenon for all the Mediterranean countries. The study deals with the types of bread that were prevalent in Algeria during the 19th century, which equally reflected the social hierarchy in that era. The wealthy class’s bread was characterized by its quality and taste, and was in majority influenced by foreign styles especially Andalusian, Turkish, and even French. The poor class bread at the contrary was mainly brown and made from barley, bran, peaks, and even oak or a mixture of different grains that was known as Boumakhlout. While the tables of the riches were abundant and plenty, the tables of the poor were characterized by scarcity and were not intended to review luxury as much as they were intended to meet the biological need. The nineteenth-century events of the end of the Ottoman presence and the beginning of the French occupation, which destroyed the social and economic structures, have led critically to a decline in the standard of living of the population. The community basically moved from the stage of production and food security to a stage of famine fears where food is a treasure. These factors and others rendered the bread in Algeria of the 19th century a clear expression of the social hierarchy and the standard of living.
